This flour is from the Einkorn wheat grown by our son Jay (Diamond J Farms) at Cold Brook Farm in Oldwick, NJ. It is stonemilled into flour by River Valley Community Grains in Long Valley, NJ. No synthetic agricultural products of any kind are ever used at Cold Brook Farm.
Einkorn is an ancient species of wheat that is very flavorful, and more nutritious than modern wheat varieties. It has a higher protein content, while also being rich in antioxidants, vitamins, and minerals. It is also easier to digest, having a simpler chromosome makeup, less starch, and also less gluten than the modern varieties.
